Baked Parmesan Hash Browns

We have many visitors at the lake during the year.  Because of that, I am always looking for recipes to serve to a crowd.  Breakfast hash browns take time and when you are juggling eggs and bacon, it is just one more pan that has to be watched.  I found this simple baked hash brown recipe on Pinterest.  You can even prep it the night before.

We went for our first boat ride of the season last week.  Spring on the lake is so beautiful.

LL Kissing Alligators

The iconic view of Lake Lure is one of our favorites.  We call this the “kissing alligators” view.  The mountain to the right is obviously an alligator head.  The mountain to the left is a little obscured, but definitely looks like an alligator head.  Our cottage is next to the orange boathouse on the right.

I have several favorite houses on the lake.  Surprisingly they all have a French Chateau look to them.  I got in trouble a few years ago peeking into this house when it was under construction.  There were “No Trespassing” signs posted, which I ignored.  The owner was next door and was not happy with me.  I tried to explain that I was a decorator and could not help myself; it fell on deaf ears.

Returning to the subject of these hash browns, I used frozen hash browns from Trader Joe’s.  I like them because they have no artificial ingredients.  Like I said before, you can prep them the night before in the pan and cover with plastic wrap for the morning.  It couldn’t be easier, and they would look great on a serving platter.

BAKED PARMESAN HASH BROWNS ( Recipe from Delicious Table )

1 bag frozen hash brown potatoes
4-5 sliced green onions
1/2 cup grated Parmesan cheese
1 teaspoon sea salt
1/2 teaspoon pepper
2 tablespoons olive oil

Spray a muffin tin with non-stick spray.  Press dry potatoes in a large mixing bowl with paper towels, this helps them crisp.  You can also use a salad spinner to help dry the potatoes.  Mix all ingredients in the bowl.  Scoop into muffin tin and press with spatula or a spoon.  Bake 45-60 minutes at 400 degrees until crispy.

    We have totally been in your shoes, Penny, peeking into under construction homes not only at the lake but here in the city!! How can you not? Al was recently at our ‘skeleton house” at the lake and found out many neighbors, even new neighbors had been peeking inside!!

    This is a wonderful recipe as we have the guest thing, too. And sometimes the kids come for breakfast here, I’d love to do this! Thanks!

  5. Congrats. on the Florida sale Penny – does this mean you won’t continue to be ‘snowbirds’? Your lake is beautiful – love the idea of kissing alligators, such a fun view.

    Looked up the home for sale – bit out of my price range, haha! Does look nice though. Hope not all your neighbors are as stuffy and unfriendly as the one who was upset with your peeking – you can peek here any day my dear!

    Nice recipe – may try it another time, trying to knock off a few pounds before crossing the pond again in a couple of weeks!

      Hi Mary, Most of our neighbors are great. I still don’t know the people who own that house.
      We still may go to Florida for a couple of months in the winter, but we will have the option of going elsewhere too. Love the modest rental rates on Airbnb and VRBO.

    Congratulations on the sale of your FL home, Penny.I thought it would sell quickly with how beautifully decorated it was. It will be hard parting with your things. I hope you’ll be back in time for Rachel’s BD celebration. The hash browns look wonderful, although I always look at your blog on my ” fast days”. Hope the rest of your weekend with the grandkids went well!

      I hope we will be back by her BD. Our closing is May 27. We are renting a u-haul to bring what we are keeping back to NC.

      We had a great time with the kids. Cameron was over the flu. Rachel and I had lunch together and shopped.

      The mountain to the right is sometimes called the sleeping maiden; you would have to see a wider view to see why. I prefer kissing alligators. Hope you try the hash browns Susan.

  10. If this winter was any indication of friends coming to Florida to visit, your hash brown recipe will come in handy. I know that you are happy to have a contract on your home but at the same time I’m sure you will miss the good times you had there.

      That is so true Karen. We are heading that way soon to empty the house and prepare of an Estate sale. Crazy times!
