Pork Carnitas

Dinner was from the freezer and pantry tonight.  We have had four days of constant rain that have made me depressed. Pictures tonight are horrible without natural light. Maybe when the sun comes out again I will feel better, but I certainly haven’t been in the mood to cook.  Pork Carinas

The carnitas were in a freezer bag from a previous meal.  The meal was wonderful in spite of coming from the freezer and pantry.  You can find the recipe for the pork carnitas here.  The final run under the broiler makes the carnitas crispy. The recipe for the rice is here. It is basmati rice flavored with cumin, turmeric, and cinnamon.  I opened a can of black beans and flavored them with oil, vinegar and orange zest.

The sun has come out today and I have hopes that my enthusiasm will return.  Enjoy your Memorial Day Weekend.

    Tell me about the rain! We can’t get our temporary gravel driveway put in for the contractors and heavy equipment until it dries up some. Hopefully the next few days will be dry. Your carnitas sound great!

    It is a bad Spring .????Raining as I type..
    Penny..have you tried Manual setting?Believe me I still don’t get the lingo but I am starting to get what to do..

    To me everything here looks warm and delicious!
    I have never made PCs..must try..

    Good looking quick meal Penny. We nearly always have some sort of cooked pork in the freezer for these occasions. I just added three quart bags from a recent BBQ day.

    It’s been raining everywhere, Penny. I feel the same way. I want to get out and then I’m shut in. Grrrrr….

    Love this idea, I’ll go look up the recipe. I use a package of sauce by Rick Bayless mostly. Has most of the ingredients and you just slow cook in the oven. Someone asked me for the recipe and I was disgusted with myself!!! Not that there were any terrible artificial ingredients, just that its not a huge thing to take the time to do things right!

      The sun is finally shining Jane, but we had a mini tornado go thru town and knock down the crafts fair booths that were set up for Memorial Day. Pottery and jewelry strewn everywhere. Happened during the middle of the night.

  6. I fix dinners like this all the time…call them pantry dinners and I think yours looks terrific as do your photos. Sorry about all the bad weather you have been having later. Paris will be here before you know it. 🙂
