Grilled Pizza

One of the skills we are trying to master this summer is great pizza on the grill. Pizza dough is not hard to make. It is basically flour, yeast, water and oil. If you have a bread machine it is even easier. But I have not been happy with the standard recipe. The dough is too elastic and forming it into a large disc is like fighting a recalcitrant child. Even after you have fought it into shape, transferring it to the grill takes agility. I have been receiving the King Arthur Flour catalogs in the mail and was intrigued by their Perfect Pizza Flour Blend and Pizza Dough Flavor. I ordered them a few weeks ago and couldn’t be more pleased with the results.

The flour blend has an all natural dough conditioner in it that allows for better rollability. It was easy to roll out and move around. It slid easily off of the pizza paddle onto the grill. It also has a touch of baking powder in the mix that creates those great bubbles in the dough as it cooks. We popped the bubbles to create crevices. The dough was thin and crisp; just what we were trying to achieve. I especially loved the addition of the pizza dough flavor. The mixture of dried cheese, garlic and herbs gave the crust a great punch of flavor.     My wife is a big fan of King Arthur products including their pizza flour. Since discovering pizza on the grill, I can’t remember the last time we used the oven – even in winter, and I’d guess you may get to the same place.

  2. How delicious this looks!! It sounds like great summer fun. Our grocery store just started to carry King Arthur flour and I couldn’t be happier as before I had to order it from the catalog.

    I’ve always wanted to try pizza on the grill. I don’t think we’ve ever ORDERED one in a couple of years, let alone baked one. I’ll have to get my Grill King on getting the temperature just right.

    I’ve seen the pizza dough flavoring on KA site and wondered what it had in it. Now that you’ve told me, I’m sure it makes a really nice addition. I made pizza dough yesterday and was going to grill pizza tonight, but the wind decided to blow a gale! Maybe it’ll quiet down by dinnertime. 🙂

    Harris Teeter (though I’m not frequenting them the way I used to) is carrying the King Arthur’s cake flour. I wonder if I could convince them to carry more of their stuff.

  10. I’m a big fan of King Arthur products too, and this is the flour I use to make pizza. Their recipes are also fantastic. Your pizza looks great!

  12. Looks fabulous Penny and great tip on the dough. We prefer our pizza crust thin. I used to get the King Arthur catalog. They have so many wonderful products.
