A Brief Break

I have been busy . . . so busy lately.  A childhood friend came for a visit.  We had a wonderful time catching up with our respective lives.  We are now in Florida visiting with our friends here.  Because our computer access is tied to our Bright House connection and we will only be here for five days, it did not seem worthwhile to establish a connection.  So David and I are at Starbucks catching up on our emails and blogs.

When I return this week I will be trying to duplicate this wonderful Salmon dish that we had at Fig, a French Bistro in Asheville.  I’ve had it twice now and was told by our Parisian waiter how it was made.  The Salmon is salt crusted on the top and flaky when cut.  The greens are varied, depending on the season.  The starch is either farro or couscous.  But what remains the same is the lemon chive beurre blanc that pulls the whole dish together.   I have made it once and although it was good, I know I can do better.  Will let you know.  I look forward to catching up with everyone soon.

    Hi Penny. Hope that you are enjoying your time away with your friends! I just escaped to Seattle after my 1700 mile bike ride! The weather here was so hot! Seattle was like a breath of fresh air! And, the salmon……love that fish! I want to share this info with you. One of my friends daughter has her “own” fishing vessel and she fishes all summer in Alaska for salmon. She lives in Asheville! When her mom visits her up there, she brings me back the salmon……Heidie sells it at the Asheville Farmers Market,along with her boyfriend,Steve. She sells out every weekend. It is flash frozen and shipped from Seattle. She has been doing this for a number of years and it is delicious.( I have several other neighbors buying it now down here.)They are a fish family~been in the business all their lives, so she knows good fish !Heidies’ dad also fishes up there…..then in the winter, they pick up their sail boat in Amsterdam and sail around Europe all winter long! What a life! That’s how good the salmon is!! Enjoy your time away from the computer!!
