Crock Pot BBQ Chicken

One of the most popular blog posts I have ever had was my recipe for Crock Pot Teriyaki Chicken.  I am still counting, but at last count it had received 20,000 hits on Pinterest and has garnered 66 comments on my post.  That tells me that there are many people out there who love their crock pots and enjoy recipes that require very little work.

This recipe for barbecued chicken falls into that category.  Ironically I found it on Pinterest, but  changed it somewhat to suit my taste.  I had a package of three large chicken breasts in the freezer.  I put them in my crock pot frozen, mixed up the sauce ingredients and cooked them on low for 6 hours.  We liked them but the flavor seemed a little intense to me.

One of the good things about the crock pot is that it turns any meat into a shreddable consistency.  By adding a little water or chicken broth to the shredded chicken I was able to achieve a most delicious BBQ chicken to serve on hamburger buns.  We enjoyed them for lunch several times.

I will be making this again in my crock pot.

CROCK POT BBQ CHICKEN

3 large chicken breasts (can be frozen)
1 bottle of your favorite barbecue sauce
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 teaspoon garlic powder
1/2 teaspoon cardamom
1 tablespoon grainy mustard

Place chicken breasts in crock pot.  Mix together the sauce ingredients.  Pour over chicken.  Cook on low 4 to 6 hours, checking occasionally for doneness.  Remove chicken and shred.  If sauce is too thick add a little water or chicken broth to it.  Return chicken to sauce.  Spoon onto warmed hamburger buns and serve.

    There are times when I groan when I think I gave my crock pot away to my DIL. But, not having family around when she did, it just seemed fair.
    At any rate….this is one of those groan moments, Penny. This looks amazing. I suppose I could do it slowly on the stove as well.

    And again you’ve done it! My husband asked me yesterday if we didn’t have some good recipes for the Crockpot (He loves our Hamilton Beach one). I’d forgotten about this. I’m going out to get the fixings right now. Love.

  3. Congratulations Penny. Those are impressive numbers. The picture doesn’t look like a crock pot dish, I bet that’s one of the reasons why it’s so popular.

    This is my kind of dish. If only I had a crockpot…

    Hi Penny dear – so enjoyed your comment, and hearing that you and Penny were able to meet up for lunch and shopping – all looked fabulous! I’m having a problem imagining her living somewhere other than than beautiful house we visited……………she and K had worked so hard to make it such a showcase. They are very talented when it comes renovating and restoration, and of course Penny is so creative with her decorating skills. Have you visited her booth yet?

    See you’re now back in NC ready to enjoy Spring and Summer in our lovely mountains. Bob and I have been traveling a lot and will continue this year…………..doing it while we can still get about!!

    Your cooking skills continue to astound………..I must try some of your recipes – the meatless ones! Off now to fix a light supper – we ate far too much while on the Queen Elizabeth!

  7. This looks delicious! It reminds me of my “twice cooked rotisserie chicken” that I just made . . . and need to post! I really like the spices that you chose for this recipe! And yes, I LOVE, my slow cooker! I’ve been using one for about 28 years! LOL!!!

    These sandwiches look delicious. I’ve used the crockpot to make BBQ chicken too, for quite a few years. It was so handy when my kids were still home, plus the whole family loved it that way.
