Croque Monsieur: Barefoot Thursday

I would like to offer a special thanks to Kathy of All Food Considered for choosing Croque Monsieur for the second Barefoot Contessa recipe this month. My passion for French food is long standing, but I had never made this decadent sandwich before. Perhaps it is because it is so decadent; bread, ham, cheese, white sauce and more cheese. I hate to admit it but I do not have a natural affinity for cheese. There was a time when I would not touch the stuff, but over the years I have allowed certain cheeses to prove their goodness to me. Gruyere is one of those cheeses. I think I learned to like it during the fondue era of the 70’s. Parmesan is another favorite and I liberally slather pizzas with it. So Croque Monsieur appealed to me on all levels and it did not disappoint.

The only change I made to the recipe was the bread. Ina uses Pepperidge Farm white bread and although I like it, I like my Bread Machine Rosemary Focaccia better. I will include that recipe also. The recipe came from a Better Homes and Gardens Bread Machine cookbook.


BREAD MACHINE ROSEMARY FOCACCIA

3/4 cup water
2 Tbls olive oil
2 cups bread flour
1 Tbls sugar
1 tsp salt
1 1/2 tsp bread machine yeast

3 Tbls olive oil
2 to 3 Tbls chopped rosemary
Course salt to taste

Add first six ingredients in the order given to the bread machine. Process on the dough setting. Remove dough from bread machine. Cover and let rest for ten minutes. Grease a 12″ round pizza pan. Roll or pat dough into pan. Cover and let rise for 30 minutes. Heat oven to 400 degrees. Make depressions in dough with fingertips. Drizzle with olive oil. Sprinkle with rosemary and coarse salt. Bake 15 to 18 minutes.

CROQUE MONSIEUR ( I made half of the recipe )

2 Tbls unsalted butter
3 Tbls all purpose flour
2 cups hot milk
1 tsp kosher salt ( I omitted )
1/2 tsp freshly ground black pepper
Pinch nutmeg
12 ounces Gruyere, grated (5 cups)
1/2 cup freshly grated Parmesan
16 slices white sandwich bread, crusts removed
Dijon mustard
8 ounces baked Virginia ham, sliced but not paper thin

Preheat the oven to 400 degrees F.

Melt the butter over low heat in a small saucepan and add the flour all at once, stirring with a wooden spoon for 2 minutes. Slowly pour the hot milk into the butter-flour mixture and cook, whisking constantly, until the sauce is thickened. Off the heat add the salt, pepper, nutmeg, 1/2 cup grated Gruyere, and the Parmesan and set aside.

To toast the bread, place the slices on 2 baking sheets and bake for 5 minutes. Turn each slice and bake for another 2 minutes, until toasted.

Lightly brush half the toasted breads with mustard, add a slice of ham to each, and sprinkle with half the remaining Gruyere. Top with another piece of toasted bread. Slather the tops with cheese sauce, sprinkle with the remaining Gruyere, and bake the sandwiches for 5 minutes. Turn on the broiler and broil for 3 to 5 minutes, or until the topping is bubbly and lightly browned. Serve hot. Makes 8 sandwiches.

Chinese Chicken Salad

It is Barefoot Blogger Thursday and today’s recipe was chosen by McKenzie of Kenzie’s Kitchen. Visit her blog to see the changes she made to this delicious dish. I have to say, I thoroughly loved making this chicken salad. What’s not to like about succulent chicken, fresh asparagus, red pepper strips and scallions in a tasty sesame, peanut dressing. And I enjoyed doing it in my Lake Lure kitchen.

It has taken us awhile to get the computers up and running. Reception is not good here in the mountains. Our original computer port was in the garage apartment up the hill from the cottage. We have been staying there while much of the construction has been going on. Now that we have moved permanently to the cottage, everything had to be dismantled and brought down the hill. I am not technically inclined, so I waited patiently (Ha!) while David cussed and wired. I took the time to sit on the deck and enjoy the beautiful Spring display all around me. Florida is wonderful, but the soft greens, pinks and whites of a changing landscape are breathtaking. Here is a view out the sliding doors to the water.

I did make a few changes to the recipe. After reading so many reviewers who said the chicken salad was too salty, I added just a pinch instead of the 4 teaspoons called for. Also I used 3 boneless skinless chicken breasts because that is what I had and there were just the two of us. I also halved the dressing and cut back on the peanut butter. The changes worked perfectly and we enjoyed a lovely lunch on a warming Spring day. Thank you McKenzie for the perfect choice of Ina’s recipe.

CHINESE CHICKEN SALAD

8 split chicken breasts (bone in, skin on)
Good olive oil
Kosher salt
Freshly ground black pepper
1 pound asparagus, ends removed, cut into thirds diagonally
2 red bell peppers, cored and seeded
4 scallions (white and green parts), sliced diagonally
2 tablespoons white sesame seeds, toasted

For the Dressing:
1 cup vegetable oil
1/4 cup good apple cider vinegar
1/3 cup soy sauce
3 tablespoons dark sesame oil
1 tablespoon honey
2 garlic cloves, minced
1 teaspoon peeled, grated fresh ginger
1 tablespoon white sesame seeds, toasted
1/2 cup smooth peanut butter
4 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Preheat the oven to 350 degrees.

Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle.

Remove the meat from the bones, discard the skin, and shred the chicken in large, bite-sized pieces.

Blanch the asparagus in a pot of boiling salted water for 3 to 5 minutes, until crisp-tender. Plunge into ice water to stop the cooking. Drain. Cut the peppers into strips about the size of the asparagus pieces. Combine the shredded chicken, asparagus, and peppers in a large bowl.

Whisk together all of the ingredients for the dressing and pour over the chicken and vegetables. Add the scallions and sesame seeds and season to taste. Serve cold or at room temperature.

Tomato and Goat Cheese Tarts

It is Barefoot Blogger Thursday and the Barefoot Contessa recipe chosen this week by Anne of Anne Strawberry is Tomato and Goat Cheese Tarts. Please visit her blog for a unique take on this recipe. The thing I like about the Barefoot Bloggers is their creativity in adapting recipes to their own tastes and situations. In my case, I chose to use oven roasted plum tomatoes rather than the slice of tomato called for in the recipe. Oven roasting gives winter tomatoes more deepth of flavor. I cut six plum tomatoes in half, drizzled them with olive oil, balsamic vinegar, salt and pepper, and a sprinkling of fresh rosemary and roasted them cut side down for 30 minutes in a 400 degree oven.

As usual for an Ina Garten dish, the flavors in the tart married well. The sauteed onions smelled heavenly when splashed with white wine and thyme and their mellowness was offset by the pungency of the goat cheese. I had a bit of sausage left over from another meal and added that on top of the goat cheese. The tomatoes added a rich topping to the tart.

The only problem I had with making the tarts was with the puff pastry. I have mentioned this before in another post but failed to heed my own advice. Parchment paper is oven safe to 400 degrees and the tarts bake at 425 degrees. The tarts were a little overdone and the parchment paper was toast. Fortunately, the taste was still wonderful and I will definitely make them again with a few adjustments. Using a silpat liner would be a good alternative, or baking them at a lower temperature would be good. I am open to suggestions from my fellow BBs.
TOMATO AND GOAT CHEESE TARTS

1 package puff pastry, defrosted
Good olive oil
4 cups thinly sliced yellow onions ( 2 large )
3 large garlic cloves, cut into thin slivers
Kosher salt and freshly ground black pepper
3 tablespoons dry white wine
2 teaspoons minced fresh thyme leaves
4 tablespoons freshly grated Parmesan, plus 2 ounces shaved with a vegetable peeler
4 ounces garlic and herb goat cheese (recommended: Mantrachet)
1 large tomato, cut into 4 (1/4 inch thick ) slices
3 tablespoons julienned basil leaves

Unfold a sheet of puff pastry on a lightly floured surface and roll it lightly to an 11 by 11 inch square. Using a 6 inch wide saucer or other round object as a guide, cut 2 circles from the sheet of puff pastry, discarding the scraps. Repeat with the second pastry sheet to make 4 circles in all. Place the pastry circles on 2 sheet pans lined with parchment paper and refrigerate until ready to use.
Preheat the oven to 425 degrees F.

Heat 3 tablespoons of olive oil in a large skillet over medium to low heat and add the onions and garlic. Saute for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat.

Using a sharp paring knife, score a 1/4 inch wide border around each pastry circle. Prick the pastry inside the score lines with the tines of a fork and sprinkle a tablespoon of grated Parmesan on each round, staying inside the scored border.

Place 1/4 of the onion mixtue on each circle, again staying with the scored edge. Crumble 1 ounce of goat cheese on top of the onions. Place a slice of tomato in the center of each tart. Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper. Finally, scatter 4 to 5 shards of Parmesan on each tart.

Bake for 20 to 25 minutes, until the pastry is golden brown. The bottom sheet pan may need an extra few minutes in the oven. Serve hot or warm.

Chicken Piccata

It is Barefoot Contessa Thursday. This week the Barefoot blogger in charge of selecting one of Ina’s recipes was Lindsey at Noodle Nights and Muffin Mornings. Visit her blog to see her take on this dish and the ingredient she added to give it extra zing. I have to say I am very happy with her selection. I have actually made this dish before and was impressed with how easy it was to prepare. so I was looking forward to doing it again. It was just as tasty this time. The lemon butter sauce freshens the heaviness of the breading and the chicken itself is moist and tender.

We invited our good friends over for an impromtu mid-week meal and the chicken piccata was a hit. Arnie, who likes dark meat, because chicken breasts are sometimes dry, said he could cut his with a fork and proclaimed it very juicy. All and all, we had a lovely evening dining on the patio with the first real warm breezes of the season. Spring is here. What a wonderful Barefoot Contessa recipe to celebrate the season. Thank you Lindsey for choosing it.

Before I give you the recipe, I have to apologize for my pictures. When you have people waiting to eat, it is not polite to run all over the house looking for your camera, and then spend ten minutes artfully arranging the lighting and food for the best shots.

CHICKEN PICCATA

4 split (2 whole) boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 cup all-purpose flour

2 extra-large eggs
1 1/2 cups seasoned dried bread crumbs
Good olive oil
3 tablespoons unsalted butter, at room temperature
1/3 cup freshly squeezed lemon juice (2 lemons) lemon halves reserved
1/2 cup dry white wine
sliced lemon, fo serving
chopped fresh flat-leaf parsley, for serving

Preheat the oven to 400 degrees. Line a sheet pan with parchment paper.

Place each chicken breast between 2 sheets of parchment paper or plastic wrap and pound it out to 1/4 inch thick. Sprinkle both sides with salt and pepper.

Mix the flour, 1 teaspoon salt, and 1/2 teaspoon pepper on a shallow plate. In a second plate, beat the eggs and 1 tablespoon water together. Place the bread crumbs on a third plate. Dip each chicken breast first in the flour, shake off the excess, and then dip in the egg and bread-crumb mixtures.

Heat 2 tablespoon olive oil in a large saute pan over medium to medium-low heat. Add 2 chicken breasts and cook for 2 minutes on each side, until browned. Place them on the sheet pan while you cook the rest of the chicken. Heat more olive oil in the saute pan and cook the second 2 chicken breasts. Place them on the same sheet pan and allow them to bake for 5 to 10 minutes while you make the sauce.

For the sauce, wipe out the saute pan with a dry paper towel. On medium heat, melt 1 tablespoon of the butter and then add the lemon juice, white wine, the reserved lemon halves, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Boil over high heat until reduced by half, about 2 minutes. Off the heat, add the remaining 2 tablespoons of butter and swirl to combine. Discard the lemon halves. Serve one chicken breast on each plate, spoon on the sauce, and serve with sliced lemon and a sprinkling of fresh parsley.

Meringues Chantilly

Once again it is time for the Barefoot Bloggers to reproduce an Ina Garten recipe. Today’s recipe was chosen by MBK at Reservations not Required. Be sure to visit her amazing blog for lots of creative ideas. Meringues Chantilly remind me of a time in my life when we held formal dinner parties. We were young, we had just discovered Julia Child, and we were out to impress the boss or the department chair. Fancy food was de rigueur and the fancier the better. Oh how I struggled and exhausted myself trying to make the dining room table set for 8 with the fancy china and cut crystal look fabulous. The food was another story. I had many successes but also a few failures. I remember the time that I tackled individual Beef Wellingtons with homemade puff pastry crusts. After the first course was served, I checked on the beef to see if it was ready and the crusts had melted droopily over the beef. Thank goodness the house we lived in at the time had a formal dining room, separate from the kitchen, so no one could see this disaster. I scraped off the offending crust and quickly browned the beef in my new 14″ copper saute pan. I think I was the only one that knew what had really happened, even though I was sweating and not the most composed hostess. Another time I made Bananas Foster for dessert and when I poured in the brandy and put a match to it to flame it, one of our guests leapt from his chair, knocking it over, and ran into the kitchen to my rescue, not knowing that the conflagration was intentional.

Upon first glance Meringues Chantilly appear to be one of those pretentious desserts. Thank goodness we live in a more relaxed time. I no longer feel the need to impress. Dinner is all about being with people you enjoy. Meringues Chantilly is still a somewhat complicated dessert, but the steps can be performed over a period of time. My meringues did not come out as tall as I would have liked. Next time I will put more pressure on the pastry bag. But it was no problem leaving them in the oven overnight. The sauce was easy to make and the whipped cream was a snap. Serving was just a matter of assembly. We had good friends visiting and Ina’s dessert was fabulous. And I didn’t sweat the small stuff.
