To continue the Greens of Winter theme, I made this flavorful and simple chicken dish that utilizes convenient store-bought products.  It was a featured recipe in Publix’s Aprons Simple Meal Program.  Every week they feature recipes from products on their aisles.  All of the ingredients are gathered at the cooking station so that, if, after sampling the dish and it is to your liking, you can gather all of the ingredients to make it; all in one place.  Genius!

Here are the major players in the dish.  I forgot to include the red wine vinegar and the sugar, but you get the general idea.  The Aprons Program is a wonderful idea for harried cooks and working families who have very little time to shop, but still want to serve their families home-cooked meals.  This was almost just as simple as ordering a pizza or stopping for take-out chinese food.  Nutritionally there is no contest. It is low in fat and full of healthy ingredients.

The only addition I made to this meal was a pot of mashed potatoes.  A brown and wild rice mix would also be good.  I think we are off to a great start in the New Year.

CHICKEN OVER WARM KALE AND ASPARAGUS SALAD (Publix Aprons Simple Meals)

1 ( 3 oz ) package shallots, coarsely chopped
1/2 cup fresh basil leaves, coarsely chopped
1/2 lb fresh asparagus spears
1 3/4 lb boneless skinless chicken breasts
1 1/4 teaspoon garlic/herb seasoning, divided
2 tablespoon canola oil
1 pint grape tomatoes
3 tablespoon sugar
1/4 cup red wine vinegar
1 ( 5 oz ) container kale salad blend
1/4 cup grated Parmesan cheese

PREP: Chop shallots and basil.  Cut asparagus into 1-inch long pieces, removing tough root end.

STEPS:
1. Preheat large saute pan on medium-high 2-3 minutes.  Season chicken with 1 teaspoon garlic/herb seasoning (wash hands).  Place oil in pan, then add chicken; cook 4-5 minutes on each side or until browned.

2. Reduce heat to low.  Stir in tomatoes and shallots; cook and stir 2-3 minutes or until tomatoes are softened.

3. Combine vinegar and sugar, then stir into tomato mixture; cook 8-10 minutes, turning chicken occasionally, or until liquid has reduced by about one-half and chicken is 165 degrees F.  Remove chicken from pan; let stand 5 minutes to rest.

4. Stir kale, basil, asparagus, and remaining 1/4 teaspoon seasoning into tomato mixture; cook 1 minute or until salad is wilted.  Transfer salad to serving plates; slice chicken and arrange on top of salad.  Sprinkle with cheese; serve.  Serves 4.

Fusilli with Collards, Bacon, and Garlic

The greens of winter reach their peak during the frigid months of the year.  Collard greens, kale and cabbage are all in season right now.  We drove to the panhandle of Florida for our New Year’s celebration with friends and the backroads were lined with fields of greens.  Workers were bent to the task of picking the leafy foliage. These inexpensive, calcium and vitamin A rich vegetables add a vitality to our winter fare.  I plan to make full use of them in my meal planning this month.

Destin Condo ViewEvery year, we get together with our friends of many years for a New Year’s celebration.  We have met at each others’ homes, but have also rented houses or condos in interesting places.  Last year we rented a house on Tybee Island.  This year we rented a condo in Destin, Florida.  The above picture is the view of the Gulf of Mexico from our balcony.  The locations may change, but the food is always the same for New Year’s Day.

New Years Dinner 2014We roast a pork butt long and slow until it falls apart.  We have garlic mashed potatoes, collard greens, black-eyed peas, pea salad and Rosa’s cornbread.  This year we made corn muffins because Jackie forgot her iron skillet and the condo kitchen had only a muffin tin.  It was a fine meal.  The best ever.  You can find some of the recipes in one of my previous posts here.  David has taken over the making of the collard greens.  He loads them up with two ham hocks and cooks them for hours.  The recipe came from his secretary Rosa, who also gave us the cornbread recipe.  I wrote about her in this post.

Fusilli with Collards Vertical

David made such a big pot of collard greens that we came home with leftovers.  Not one to waste a good thing, I made a pasta dish incorporating the greens.  The original recipe came from Gourmet Magazine.  Since my greens were already cooked, it was easy to throw together.  We loved it.  I will give you the recipe as written in Gourmet and Rosa’s recipe for collard greens.  The Gourmet recipe did not call for a long cooking of the greens.  Either way, I think you would enjoy this.  Happy New Year everyone.

FUSILLI WITH COLLARDS, BACON, AND GARLIC ( Adapted from Gourmet Magazine )

1 pound collards, coarse stems discarded and the leaves washed well and chopped coarse
1/4 pound sliced bacon, cut into 1/2-inch pieces
4 large garlic cloves, chopped fine
1 large onion, sliced thin
1/4 teaspoon dried hot red pepper flakes
1/3 cup olive oil
3/4 pound fusilli (spiral-shaped pasta)
1 tablespoon red-wine vinegar
freshly grated Parmesan as an accompaniment

In a kettle of boiling water boil the collards for 10 minutes, drain them in a colander set over a large bowl, and return the cooking liquid to the kettle.  In a large skillet cook the bacon over moderate heat, stirring, until it is just browned and transfer it with a slotted spoon to a small bowl.  Pour off the fat from the skillet and in the skillet cook the garlic, the onion, and the red pepper flakes in half the oil over moderately low heat, stirring, until the onion is softened and the garlic is golden brown.  Bring the cooking liquid to a boil, in it boil the fusilli until it is al dente, and drain the fusilli well.  To the skillet add the collards, the bacon, the fusilli, the remaining oil, and the vinegar and toss the mixture well.  Season the fusilli with salt and pepper, divide it among 4 bowls, and sprinkle each serving with some of the Parmesan.  Serves 4.

ROSA’S COLLARD GREENS (This is a very loose recipe)

Put your ham hocks in water and cook on top of the stove.
Then cut the greens up, cut bottom stems off.  Do not cook stems, then wash greens 4 times in the sink.
Then put more water in the pot with the meat, add the greens.
Add hot peppers, salt, pinch of sugar.
Let cook about 1 hour and 1/2.

Chorizo, Cheddar and Chive Scones

I hope everyone had a wonderful Christmas.  We have been enjoying our time with the family in North Carolina.  Kristen made a delicious Christmas Day brunch that included these savory Chorizo, Cheddar and Chive Scones.  I have always loved sweet scones, but this savory version is very similar to sausage biscuits and is very festive.  Kristen adapted a recipe from King Arthur Flour for Bacon-Cheddar-Chive Scones.  I will give you her recipe here but you can go to their link for the original recipe.

I love the way Kristen cut her scones.  Because we were serving children as well as adults, she formed the dough into a rectangular log and then cut wedge shapes from it on an angle.  This made many smaller scones which were perfect for everyone’s appetite.  It also has the advantage of more of the crispy edge surface which I love.

Our Christmas breakfast included the scones, scrambled eggs and a tropical salad of pineapple, mango and blueberries with mango bellinis for the adults and mango sparkling water for the children.  These scones will be making a repeat appearance on my New Years’  brunch table.

CHORIZO, CHEDDAR AND CHIVE SCONES

2 cups (8 1/2 ounces) King Arthur  Unbleached All-Purpose Flour or Perfect Pastry Blend
1 teaspoon salt
1 tablespoon baking powder
2 teaspoons sugar
4 tablespoons (1/2 stick, 2 ounces) cold  butter
1 cup (4 ounces) very coarsely grated or  diced cheddar cheese
1/3 cup (about 1/2 ounce) snipped fresh chives, or finely diced scallion tops (the  green part, 3/4 ounce)
1/2 pound chorizo sausage links, casing removed, crumbled, sauteed and drained on paper towels
3/4 cup + 2 tablespoons (7 ounces) heavy cream or whipping cream, or enough to make the dough cohesive

Preheat the oven to 425°F. Lightly grease a baking sheet, or line it with parchment.

1) Whisk together the flour, salt, baking powder, and sugar.

2) Work the butter into the flour until the mixture is unevenly crumbly, with some of the butter remaining in larger pieces.

3) Mix in the cheese, chives, and sausage until evenly distributed.

4) Add ¾ cup of the cream, stirring to combine. Try squeezing the dough together; if it’s crumbly and won’t hang together, or if there are crumbs remaining in the bottom of the bowl, add cream until the dough comes together. Transfer the shaggy dough to a well-floured work surface.

5) Pat the dough into 2 smooth  disks about ¾” thick. Transfer the disks to the prepared baking sheet.

6) Use a knife or bench knife to cut the disks into small wedges, spreading the wedges apart a bit on the pan.

7) Brush the scones with a bit of cream; this will help their crust brown.

8) Bake the scones for 20 to 24 minutes, until they’re golden brown. Remove them from the oven, and cool right on the pan. Serve warm, or at room temperature.

Christmas Pretzel Hugs and a Merry Christmas

Here is a very easy Christmas treat.  There is minimal baking and all you need is patience and a steady hand.  The cookies use square pretzels, Hershey’s Hugs and Christmas M & M’s.  I found the recipe on Pinterest from Jaclyn of Cooking Classy.

It makes 70 treats.  We will be taking these to North Carolina for the Grandkids.  I wish all of you a Merry Christmas and a Happy New Year with special hugs from me.  May you have a magical time with your loved ones.

CHRISTMAS PRETZEL HUGS

70 Square pretzels (Do not use Butter Snaps)
70 Hershey’s Hugs, unwrapped
70 milk chocolate M & M’s. (I used Christmas ones)

  • Preheat oven to 200 degrees. Line a cookie sheet with a Silpat or parchment paper. Align pretzels on cookie sheet in a single layer then top each pretzel with one Hershey’s Hug chocolate. Bake in preheated oven for 4 – 5 minutes, until the chocolate is shiny and soft (but NOT melting, the chocolates should still hold their shape).
  • Remove from oven and carefully place one M&M in the center of each soft Hug and press down on M&M to spread the chocolate. Place in refrigerator and allow to rest until chocolate has set, about 5 minutes. Store in an airtight container.

Santa Baby may find these cookies to his liking.  They are not too sweet and have a strong citrusy tang that will keep him going on his rounds.  We will be spending Christmas with the grandkids and their parents this year.  It means a trip back to North Carolina, but it is so worth it.  Christmas through a child’s eyes can’t be beat.

 Baking cookies has not been high on my holiday priority list this year.  Since I am trying to simplify and relax this year, baking sweets seemed to be an obvious task to relegate to the “I’ll get around to it when I can” list.  Well, I found time this week on a sunny afternoon.  Gifts were ordered on line, the tree was up, wreaths on the door and cards were mailed.  Butter, flour and sugar were calling my name.

These are very easy cookies to assemble.  I didn’t have time or the inclination to do anything more complicated.  They are also very good, even though someone in the family would have preferred chocolate.  That will be coming up next.

GLAZED CITRUS ROUNDS ( The Food Network Magazine)

Makes about 30 cookies

2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 sticks unsalted butter, at room temperature
1 1/4 cups granulated sugar
1 1/2 tablespoons finely grated citrus zest (orange, lemon, lime or grapefruit)
2 large egg yolks
3/4 teaspoon lemon extract
1/4 teaspoon orage extract
1 cup confectioners’ sugar, sifted
2 to 3 tablespoons fresh citrus juice (use the same kind as the zest)

Whisk the flour, baking soda and salt in a medium bowl.  Beat the butter in a large bowl with a mixer on medium-high speed until smooth.  Add the granulated sugar and 1 tablespoon citrus zest and beat until light and fluffy, about 2 minutes.  Beat i the egg and orange extracts.  Reduce the mixer speed to low; add the flour mixture and beat until a soft dough forms.

Line 2 baking sheets with parchment paper.  Scoop rounded tablespoonfuls of dough about 2 inches apart onto the prepared baking sheets.  Freeze at least 30 minutes or overnight.

Preheat the oven to 375 degrees F.  Bake the cookies straight from the freezer, 1 baking sheet at a time, until the edges are set and the bottoms are lightly browned, 15 to 17 minutes.  Let cool 3 minutes on the baking sheet, then transfer to a rack to cool completely.

Meanwhile, make the glaze: Whisk the confectioners’ sugar, 2 tablespoons citrus juice and the remaining 1/2 tablespoon zest in a medium bowl until thick and smooth.  (Add 1 more tablespoon citrus juice if the glaze is too thick.)  Spread on the cookies; transfer to a rack and let set, about 1 hour.
